Natural Process is the traditional “classic” natural processing method without fermentation, where the red burgundy cherries/fruits are left overnight, and the next morning the fruits are sent to the beds for a period of about 30 days to dry. Variations occur in the sensory profile when the fruits are harvested at a grape color instead of burgundy-red color.
